gram's no-bake fudge "cookies"
This recipe goes way back to my childhood. My mother used to make these delicious no-bake "cookies" quite often. They're so easy to make and so delicious! They taste so much like the fudge my mother used to make....you know....the kind you have to beat forever to get the fudge to cool and lose it's gloss before spreading it in the pan? But these require only a fraction of the time. You can make them "your own" by adding your favorite ingredients, like raisins, toasted nuts, coconut, M&M's ..... I'd like to try malted milk powder next time I make them!

Ingredients
- 1/2 cup butter
- 2 cups granulated sugar
- 1/2 cup whole milk
- 4 1/2 tablespoons baking cocoa
- 1 pinch salt
- 1/2 cup creamy peanut butter
- 1 teaspoon vanilla extract
- 3 1/2 cups old fashioned oats
- mix-ins (coconut, chopped nuts, etc), optional
How To Make gram's no-bake fudge "cookies"

Step 1Place a 2-3 quart saucepan over medium/high heat. Add the butter, sugar, milk, cocoa and salt. Bring to a boil, stirring constantly. Boil for 2 to 3 minutes, stirring constantly.

Step 2Remove from the heat and add the peanut butter. Mix well to combine.

Step 3Add the extract and oats. Mix well. At this point, add any "add-ins" that you want to use.

Step 4Drop the mixture by tablespoonfuls onto waxed paper-lined baking sheets. Refrigerate until set. Store in airtight containers.
