grammy peg's christmas cookies
As a child, receiving these cookies from my Grammy Peg was a huge part of our Christmas tradition. Now, my mom, sisters, sister-in-law, nieces, and daughter-in-law all get together and make these delicious cookies every year on the Friday after Thanksgiving. This recipe makes a lot of cookies, approximately 400 2" cookies. Stored in an air-tight container they will last for months and months. I hope you enjoy them too!!

Any adventurous baker will love to try this old-fashioned Christmas sugar cookie recipe. One of the ingredients is Baker's Ammonia (often known as ammonium carbonate) which is a leavening agent. The ammonia evaporates as it cookies to create little air pockets in the cookies. When baked, these cookies hold their shape very well. Have fun decorating and making them festive. The sugar cookie recipe makes a ton, so they're perfect for gift-giving. Store the baked cookies in an air-tight container, and they'll last a while.
Ingredients
- 3 cups salted butter
- 4 cups granulated sugar
- 10 large eggs
- 2 tablespoons rosewater
- 2 tablespoons vanilla extract
- 2 tablespoons Baker's Ammonia
- 12-15 cups all-purpose flour

Step 1Preheat oven to 350 degrees F. In a large bowl, cream the butter and sugar together until well blended.

Step 2Add the eggs one at a time.

Step 3Add the rosewater, vanilla, and Baker's Ammonia. Mix well.

Step 4Slowly add the flour, enough that the dough feels smooth and not sticky.

Step 5Roll out the dough on a floured board to 1/8-inch thickness.

Step 6Cut with your favorite shaped cookie cutters and place on ungreased cookie sheets.

Step 7Decorate with colored sugars, jimmies, confetti, etc.
