grain cookies
(1 RATING)
I don't remember where I got this recipe but it's quick and easy. You can use a granola or a muesli cereal (My choice is muesli). It was difficult to get my children to eat healthier but they loved these cookies. You can add extra raisins, chopped dates, chopped figs and chopped nuts. I have even changed the amount of flour to 1/2 cup and added1/2 cup of pecan meal. This was a tricky way to get more fiber into my family's diet and they are so tasty and crunchy.

How To Make grain cookies

-
Step 2In small bowl combine flour, baking powder, salt, cinnamon and nutmeg. Set aside.
-
Step 3In a large bowl cream butter, sugar and vanilla.
-
Step 4Stir in flour mixture slowly until well incorporated.
-
Step 5Fold in cereal gradually trying not to crush the ingredients. Stir until well combined.
-
Step 6Drop by rounded tablespoon onto ungreased cookie sheet.
-
Step 7Bake 10-12 minutes until lightly brown.
-
Step 8Cool one minute before moving to rack.
-
Step 9NOTE: If I add a significant amount of additional raisins, dates, nuts... I have had to add a bit of milk to keep the batter from getting too dry. Add very small amounts and stir before adding additional milk. You can also try using whole wheat flour instead of white.
