These cookies are wonderful and cook up so well...You are sure to make everybody in your house happy with a batch . You might want to double the recipe , because they want last long !!!!

1/2 cup crisco shortening
1 1/3 cups light brown sugar
2 - eggs
1 teaspoon vanilla
1 1/4 cups self rising flour
1 cup special k cereal (crushed )
1 1/2 cups pecans (chopped )

How To Make gooey pecan cookies

Step 1

Cream together shortening, sugar , eggs and vanilla. Add dry ingredients and mix well.Roll into 2 inch balls and place on parchment paper.

Step 2

Bake in a pre-heated 350 oven for 9 to 11 minutes. Do not overbake . Let cool completely before removing.
