gluten free vegan oatmeal raisin cookies

This was my first recipe with coconut flour. I love the smell of it - like toasted coconut. I use beet sugar in all my recipes due to an allergy. Cane sugar will work just as well.

Ingredients
- 1/8 cup coconut flour
- 5/8 cup king aruthur gluten-free multi-purpose flour
- 1/2 teaspoon baking soda
- 1/2 tablespoon salt
- 1/2 teaspoon cinnamon
- 1 teaspoon xanthum gum
- 1 tablespoon flax seeds, ground into meal
- 3/4 cup beet sugar
- 1 tablespoon dark karo syrup or molasses
- 2 tablespoons maple syrup
- 1/4 cup coconut oil
- 1/4 cup unsweetened applesauce
- 1/2 teaspoon vanilla
- 1 1/2 cups rolled oats
- 1/2 cup raisins
- 1/2 cup walnut pieces (optional)

Step 1Mix flax seed meal into applesauce. Set aside.

Step 2Put your raisins in a cup or bowl and pour hot water over them to plump them. Cover and set aside.

Step 3Mix flours, baking soda, salt, cinnamon, and xanthan gum together in a medium bowl.

Step 4In another medium bowl, mix sugars,syrups, applesauce and flax meal, oil, and vanilla.

Step 5Mix flour mixture into your sugar mixture and stir until blended.

Step 6Stir in oats. When the oats are mixed well, add raisins and walnuts. Preheat oven to 350 degrees while you let mixture sit for 10 minutes.

Step 7Drop your cookies onto a greased cookie sheet. The cookies will not spread so you can put them close to each other. Bake for 12 to 14 minutes. Let cool for 5-8 minutes on the sheet, then transfer to a wire rack to finish cooling.
