Gluten Free Vegan Oatmeal Raisin Cookies

I use beet sugar in all my recipes due to an allergy. Cane sugar will work just as well.
Ingredients

1/8 ccoconut flour

5/8 cking aruthur gluten-free multi-purpose flour

1/2 tspbaking soda

1/2 Tbspsalt

1/2 tspcinnamon
-
1 tspxanthum gum
-
1 Tbspflax seeds, ground into meal
-
3/4 cbeet sugar
-
1 Tbspdark karo syrup or molasses
-
2 Tbspmaple syrup
-
1/4 ccoconut oil
-
1/4 cunsweetened applesauce
-
1/2 tspvanilla
-
1 1/2 crolled oats
-
1/2 craisins
-
1/2 cwalnut pieces (optional)
How to Make Gluten Free Vegan Oatmeal Raisin Cookies
- Mix flax seed meal into applesauce. Set aside.
- Put your raisins in a cup or bowl and pour hot water over them to plump them. Cover and set aside.
- Mix flours, baking soda, salt, cinnamon, and xanthan gum together in a medium bowl.
- In another medium bowl, mix sugars,syrups, applesauce and flax meal, oil, and vanilla.
- Mix flour mixture into your sugar mixture and stir until blended.
- Stir in oats. When the oats are mixed well, add raisins and walnuts.
Preheat oven to 350 degrees while you let mixture sit for 10 minutes. - Drop your cookies onto a greased cookie sheet. The cookies will not spread so you can put them close to each other.
Bake for 12 to 14 minutes.
Let cool for 5-8 minutes on the sheet, then transfer to a wire rack to finish cooling.
