gluten free vegan oatmeal raisin cookies

This was my first recipe with coconut flour. I love the smell of it - like toasted coconut. I use beet sugar in all my recipes due to an allergy. Cane sugar will work just as well.

Ingredients

  • 1/8 cup coconut flour
  • 5/8 cup king aruthur gluten-free multi-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 tablespoon salt
  • 1/2 teaspoon cinnamon
  • 1 teaspoon xanthum gum
  • 1 tablespoon flax seeds, ground into meal
  • 3/4 cup beet sugar
  • 1 tablespoon dark karo syrup or molasses
  • 2 tablespoons maple syrup
  • 1/4 cup coconut oil
  • 1/4 cup unsweetened applesauce
  • 1/2 teaspoon vanilla
  • 1 1/2 cups rolled oats
  • 1/2 cup raisins
  • 1/2 cup walnut pieces (optional)

How To Make gluten free vegan oatmeal raisin cookies

  • Step 1
    Mix flax seed meal into applesauce. Set aside.
  • Step 2
    Put your raisins in a cup or bowl and pour hot water over them to plump them. Cover and set aside.
  • Step 3
    Mix flours, baking soda, salt, cinnamon, and xanthan gum together in a medium bowl.
  • Step 4
    In another medium bowl, mix sugars,syrups, applesauce and flax meal, oil, and vanilla.
  • Step 5
    Mix flour mixture into your sugar mixture and stir until blended.
  • Step 6
    Stir in oats. When the oats are mixed well, add raisins and walnuts. Preheat oven to 350 degrees while you let mixture sit for 10 minutes.
  • Step 7
    Drop your cookies onto a greased cookie sheet. The cookies will not spread so you can put them close to each other. Bake for 12 to 14 minutes. Let cool for 5-8 minutes on the sheet, then transfer to a wire rack to finish cooling.
