gluten free sugar cookies

These little sugar cookies are so easy! You roll them into one inch balls or flatten them out to look like a cookie. I prefer to flatten them. I call them "our little wedding cookies."

Ingredients
- 1 cup butter, softened (not margarine)
- 1/2 cup confectioners' sugar
- 1 teaspoon vanilla extract
- 1 medium egg, whole
- 2 1/4 cups bisquick mix, gluten free
- 3/4 cup pecan, chopped really small but not too fine
- 2/3 cup confectioners' sugar
How To Make gluten free sugar cookies

Step 1Preheat over 400 degrees. Mix butter, 1/2 cup sugar, vanilla and egg in large bowl. Stir in Bisquick and nuts. Mix until dough holds together. Next shape into little 1 inch cookies or balls. Place on ungreased cookie sheets leaving about 1 inch between each cookie. Bake about 8 to 10 minutes, set but not brown. Remove immediately from the cookie sheets and cool slightly. Roll or gently shake cookies in confectioner's sugar. Cool without touching each other. Roll or gently shake in confection's sugar one more time. You may let them touch after this time.

Step 2Note: You may substitute other kinds of chopped nuts or miniture chips: chocolate, white etc. You may make larger size cookies but may need to bake a minute or two longer, just don't let them brown. I love pecans so that is my choice.
