gluten-free peanut butter cookies

When my mother developed Celiac Sprue several yrs. ago, I began searching for recipes that did not contain gluten (flour). She adores these simple cookies.

Ingredients

  • 1 cup creamy peanut butter
  • 1 cup granulated sugar
  • 1 - egg
  • 1 teaspoon baking soda

How To Make gluten-free peanut butter cookies

  • Step 1
    Mix all ingredients together in a medium bowl, using a hand mixer. Roll into walnut sized balls (by hand). Place onto ungreased cookie sheet, flatten with heel of hand. Create cross-hatch pattern with tines of fork. Bake at 350, for 8-12 min. Just until lightly golden. Do not overbake. Cool on sheetpan, if you can. We usually eat the first batch before they even cool!
