I found this recipe on my Gluten Free Oatmeal bag, I made a couple substitutions and posted it here so I wouldn't lose it but I have not tried it yet. If you decide to try it out before I do, let me know what you think!

1/2 c
brown sugar
1/2 c
granulated sugar
1/2 c
coconut oil
1 tsp
2 tsp
1/2 tsp
baking soda
1/2 tsp
baking powder
1/2 tsp
sea salt
1 tsp
xanthan gum
1 c
gluten free glad flour*
1 1/2 c
gluten free rolled oats
1 c
toffee baking bits

How to Make Gluten Free Oatmeal Toffee Cookies


  • 1Sift together dry ingredients, except oats and toffee bits and set aside.
  • 2Cream coconut oil and sugars together. (Depending on the temperature in your kitchen you may need to warm or cool your coconut oil)
  • 3Add egg, vanilla and water and mix until well blended.
  • 4Add flour mixture and mix until just combined.
  • 5Stir in oatmeal and toffee bits.
  • 6Cover Cookie sheet with parchment paper and place rounded balls of dough about 3 inches apart on the sheet.
  • 7Bake at 350F for 10-12 minutes. Allow to cool before removing from sheet. This makes 3 dozen cookies.
