gluten free oatmeal toffee cookies
I found this recipe on my Gluten Free Oatmeal bag, I made a couple substitutions and posted it here so I wouldn't lose it but I have not tried it yet. If you decide to try it out before I do, let me know what you think!

Ingredients
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup coconut oil
- 1 - egg
- 1 teaspoon vanilla
- 2 teaspoons water
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon sea salt
- 1 teaspoon xanthan gum
- 1 cup gluten free glad flour*
- 1 1/2 cups gluten free rolled oats
- 1 cup toffee baking bits
How To Make gluten free oatmeal toffee cookies

Step 1Sift together dry ingredients, except oats and toffee bits and set aside.

Step 2Cream coconut oil and sugars together. (Depending on the temperature in your kitchen you may need to warm or cool your coconut oil)

Step 3Add egg, vanilla and water and mix until well blended.

Step 4Add flour mixture and mix until just combined.

Step 5Stir in oatmeal and toffee bits.

Step 6Cover Cookie sheet with parchment paper and place rounded balls of dough about 3 inches apart on the sheet.

Step 7Bake at 350F for 10-12 minutes. Allow to cool before removing from sheet. This makes 3 dozen cookies.
