Ingredients

  • 2 1/4 cups flour
  • 2 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 3/4 cup butter, softened
  • 1 cup brown sugar
  • 1 large egg
  • 1/4 cup molasses
  • 1/4 cup sugar in the raw

How To Make ginger chewies

  • Step 1
    Preheat oven to 350 degrees. Line cookie sheets with parchment paper.
  • Step 2
    Sift flour, baking soda, cinnamon and ginger into a bowl.
  • Step 3
    Cream the butter and brown sugar with electric mixer.
  • Step 4
    Add egg and molasses and mix until blended and an even light brown color.
  • Step 5
    On low speed mix in flour mixture until incorporated.
  • Step 6
    Place sugar in the raw on a plate.
  • Step 7
    Scoop dough with cookie scoop and roll into ball.
  • Step 8
    Roll cookie ball in the sugar and place on the cookie sheet.
  • Step 9
    Bake 12 minutes until the tops are cracked.
  • Step 10
    Cool on cookie sheet 5 minutes before transferring to wire racks to cool completely.
