Finska Kakor (Finnish Cakes)

This is a recipe from my late mother-in-law and hails from Finland. These cookies are oh so buttery and a wonderful addition during the holidays.
Note: The prep time includes chilling the dough.

makes approximately 4 dozen 2 inch x 3/4 inch cookies

  • 3/4 c
    butter (soft)
  • 1/4 c
  • 1 tsp
    almond extract
  • 2 c
    sifted flour
  • 1/3 c
    blanched almonds, finely chopped
  • 1 Tbsp
  • 1 large
    egg (egg white only slightly beaten)

How to Make Finska Kakor (Finnish Cakes)


  1. Mix thoroughly with hands:
    butter, sugar and almond extract
    Add in sifted flour
  2. Wrap dough ball in plastic wrap and put in the refrigerator to chill about 2 hours or longer.
  3. When you are ready to bake, remove dough from refrigerator and preheat oven to 350 degrees.
  4. lightly flour your surface and roll dough out about 1/4 inch thick.
    Cut into strips about 2 1/2 inches long by 3/4 inch wide.
  5. Brush tops lightly with egg white and sprinkle with a mixture of Tbsp sugar and almonds.
  6. Carefully transfer several strips at a time to an ungreased baking sheet.
    Bake just until cookies begin to turn a very delicate golden brown (17 to 20 minutes)
