finska kakor (finnish cakes)
This is a recipe from my late mother-in-law and hails from Finland. These cookies are oh so buttery and a wonderful addition during the holidays. Note: The prep time includes chilling the dough.

makes approximately 4 dozen 2 inch x 3/4 inch cookies
Ingredients
- 3/4 cup butter (soft)
- 1/4 cup sugar
- 1 teaspoon almond extract
- 2 cups sifted flour
- 1/3 cup blanched almonds, finely chopped
- 1 tablespoon sugar
- 1 large egg (egg white only slightly beaten)

Step 1Mix thoroughly with hands: butter, sugar and almond extract Add in sifted flour

Step 2Wrap dough ball in plastic wrap and put in the refrigerator to chill about 2 hours or longer.

Step 3When you are ready to bake, remove dough from refrigerator and preheat oven to 350 degrees.

Step 4lightly flour your surface and roll dough out about 1/4 inch thick. Cut into strips about 2 1/2 inches long by 3/4 inch wide.

Step 5Brush tops lightly with egg white and sprinkle with a mixture of Tbsp sugar and almonds.

Step 6Carefully transfer several strips at a time to an ungreased baking sheet. Bake just until cookies begin to turn a very delicate golden brown (17 to 20 minutes)
