ellen's best peanut butter cookies
I have been making these cookies forever and never get tired of them. They are the real deal! The original recipe came from my mother, as I recall. I just know that they are delicious with a cold glass of milk!

Ingredients
- 1 cup butter flavor shortening
- 1 cup sugar
- 1 cup brown sugar
- 1 teaspoon vanilla
- 2 - egg, beaten
- 1 cup peanut butter (i use crunchy)
- 2 1/2 cups all purpose flour
- 2 teaspoons baking soda
- dash salt

Step 1In a large bowl, combine shortening, sugars, peanut butter and vanilla. Mix well; add eggs and mix thoroughly.

Step 2In a separate bowl, mix together flour, soda, and salt. Add to the sugar/shortening mixture and mix thoroughly.

Step 3Shape batter into 1-inch balls and place 2 inches apart on an ungreased baking sheet. Press each cookie down with a fork in a crisscross pattern.

Step 4Bake in a 375-degree oven for 10-12 minutes. Cool slightly before removing from pan. Makes about 6 dozen.

Step 5NOTE: For a variation, add 1/2 cup semi-sweet chocolate bits to the batter.
