I have been making these cookies forever and never get tired of them. They are the real deal! The original recipe came from my mother, as I recall. I just know that they are delicious with a cold glass of milk!

Ingredients

  • 1 c
    butter flavor shortening
  • 1 c
    sugar
  • 1 c
    brown sugar
  • 1 tsp
    vanilla
  • 2
    egg, beaten
  • 1 c
    peanut butter (i use crunchy)
  • 2 1/2 c
    all purpose flour
  • 2 tsp
    baking soda
  • dash(es)
    salt

How to Make ELLEN'S BEST PEANUT BUTTER COOKIES

Step-by-Step

  1. In a large bowl, combine shortening, sugars, peanut butter and vanilla. Mix well; add eggs and mix thoroughly.
  2. In a separate bowl, mix together flour, soda, and salt. Add to the sugar/shortening mixture and mix thoroughly.
  3. Shape batter into 1-inch balls and place 2 inches apart on an ungreased baking sheet. Press each cookie down with a fork in a crisscross pattern.
  4. Bake in a 375-degree oven for 10-12 minutes. Cool slightly before removing from pan. Makes about 6 dozen.
  5. NOTE: For a variation, add 1/2 cup semi-sweet chocolate bits to the batter.
