easy low carb peanut butter cookies

I really needed to find something sweet that wouldn't affect my blood sugar level. YUM! These cookies fit the bill. Only 6 g. carbs, 45 calories, 5 g total fat - it will be even less if you use the Splenda!

Ingredients

  • 1 cup peanut butter, crunchy
  • 1/2 cup brown sugar, light - can use splenda brown sugar blend
  • 1 - egg
  • 1/2 teaspoon baking soda
  • 1/4 cup peanuts, chopped

How To Make easy low carb peanut butter cookies

  • Step 1
    Preheat oven to 350'
  • Step 2
    In a large bowl, combine all ingredients.
  • Step 3
    Place dough by teaspoonfuls on a non-stick baking sheet, and press down with a fork to form ridges.
  • Step 4
    Bake for 12 minutes until just lightly browned.
