easy low carb peanut butter cookies
I really needed to find something sweet that wouldn't affect my blood sugar level. YUM! These cookies fit the bill. Only 6 g. carbs, 45 calories, 5 g total fat - it will be even less if you use the Splenda!

- 1 cup peanut butter, crunchy
- 1/2 cup brown sugar, light - can use splenda brown sugar blend
- 1 - egg
- 1/2 teaspoon baking soda
- 1/4 cup peanuts, chopped

Step 1Preheat oven to 350'

Step 2In a large bowl, combine all ingredients.

Step 3Place dough by teaspoonfuls on a non-stick baking sheet, and press down with a fork to form ridges.
