easy lemon squares

This recipe comes from my late mother-in-law. When ever I volunteer to make a batch, the host always asks "what's everyone else having for dessert?" I always make two batches when baking for a gathering.

Ingredients

  • 1 box yellow cake mi
  • 2 - eggs (room temperature)
  • 1/3 cup vegetable oil
  • 8 ounces cream cheese (at room temperature)
  • 1/3 cup granulated sugar
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon lemon peel grated (optional)
  • - powdered sugar for garnish (optional)

How To Make easy lemon squares

  • Step 1
    Combine dry cake mix, 1 egg and oil until crumbly. Reserve 1 cup for topping. Press remainder into a 13 x 9 inch ungreased pan. Bake in a preheated 350 oven for 15 minutes or until just beginning to brown.
  • Step 2
    Beat cream cheese, sugar,1 egg, lemon juice and peel (if using) until smooth and creamy. Spread on top of baked crust. (Crust can be hot). Sprinkle with reserved crumbs. Continue baking 15 minutes or until golden brown and set. Cool completely. Dust with powdered sugar. Cut into squares and refrigerate covered.
