easy cranberry cheesecake bars

I found this recipe about 25 yrars ago in one of those holiday cookbooks at the checkout counter. I'm not sure which one because I have misplaced it. The orange zest is my own addition. I hope you enjoy these as much as we do. They are quick, easy, delicious and impressive enough for company. The cranberry swirled with the white cheesecake make them very festive looking for the holidays.

Ingredients

  • 1 box white cake mix
  • 1/2 cup butter, softened
  • 1 large egg
  • 1/2 cup finely chopped pecans
  • 1 - 8 oz packages creamed cheese, softened
  • 1/4 cup powdered sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon freshly grated nutmeg
  • 2 teaspoons orange zest
  • 1 can whole berry cranberry sauce

How To Make easy cranberry cheesecake bars

  • Step 1
    Preheat oven to 350 degrees. Spray a 9"x13" pan with cooking spray. Set aside.
  • Step 2
    In mixer bowl blend together first four ingredients and mix until crumbly. Pat mixture into bottom of the prepared pan. Bake for 6-8 minutes until crust is set but not browned.
  • Step 3
    In bowl mix together creamed cheese, powdered sugar, vanilla, egg and 1 teaspoon of the orange zest. Pour carefully over crust. Smooth evenly.
  • Step 4
    In small bowl mix together cranberry sauce, nutmeg, and remaining orange zest. Spoon over creamed cheese layer in 3 rows. Draw knife thru back and forth to swirl cranberry into cheese cake layer.
  • Step 5
    Bake for 30-40 minutes until creamed cheese mixture is set. Cool in pan and cut into 36 bars. Enjoy!
