double chocolate peppermint bark cookies

I was looking for an easy but different "holiday" cookie to take to a tailgate (in December) so I made this up as I went! They were a hit and everyone asked for the recipe! I hope you and yours enjoy these moist holiday cookies! Cheers!

Ingredients

  • 2 cups flour
  • 3/4 cup baking cocoa
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 sticks butter, room temperature
  • 4 ounces cream cheese, room temperature
  • 2 - eggs, room temperature
  • 3/4 cup dark brown sugar (or light)
  • 1 cup sugar
  • 1 teaspoon pure vanilla extract
  • 1/2 cup semi-sweet mini chocloate chips
  • 1 cup peppermint bark, chopped

How To Make double chocolate peppermint bark cookies

  • Step 1
    Preheat oven to 350
  • Step 2
    In a separate bowl, sift flour, cocoa, soda, and salt. Set aside
  • Step 3
    Beat sugars, cream cheese and butter together. Add vanilla. Add one egg at a time and beat until fully incorporated before adding second. Gradually add dry ingredient mixture. Beat until fully incorporated. Stir in chocolate chips and peppermint bark
  • Step 4
    Place spoonfuls of dough on foil lined cookie sheets and bake for 8-10 minutes. Let cool on cookie sheets for a minute then transfer to wire cooling racks. Enjoy!
