These cookies are very moist and delicious! You may use Pecans or English Walnuts for the nuts. My friends and I like them with Pecans. If you wish to make these healthier you can substitute 3 cups of whole wheat flour for 3 cups of the white flour.

Makes 3 dozen cookies
Ingredients
- 8 tablespoons boiling water
- 1 pound chopped and pitted dates
- 2 cups shortening
- 2 cups dark brown sugar
- 1 cup white granulated sugar
- 2 teaspoons baking soda
- 4 large eggs (beaten)
- 6 cups white flour
- 1 teaspoon salt
- 2 teaspoons vanilla
- 2 cups coarsely chopped pecans or english walnuts

Step 1Pour boiling water over dates, set aside. Cream shortening and sugars. Beat in eggs. In a separate bowl sift together the dry ingredients. Combine the dry ingredients to the wet mixture. Drain excess water from dates, stir in the vanilla. Add dates and nuts to cookie dough. Drop by rounded teaspoons onto a greased cookie sheet. Bake in a preheated 350 degree F oven for 12 minutes.
