This is a favorite cookie from Malta. It reminds me of my Mom's favorite date stuffed cookies my Grandma used to make her.

Ingredients For date diamonds
- FOR THE PASTRY

3 2/3 cflour

1/3 csugar

1egg
-
1/2 cbutter
-
1 pinchbaking powder
- FOR THE FILLING

14 ozdates
-
orange zest
-
lemon zest

2 Tbspbrandy
How To Make date diamonds

1Mix butter, flour and baking powder together and work until smooth.

2Mix sugar and egg together, add to the flour and work to a smooth dough.

3Cover bowl and let the dough rest for 2 hours.

4Put 2 T water in a pan with the dates. Heat for 3 or 4 minutes.

5Add the brandy and the zests to the dates and mash together with a fork.

6Open the pastry into long strips about 4 in wide. Brush the edges with water.

7Put a little filling down the center.

8Fold pastry. Press both edges to keep the filling in.

9Using a ravioli cutter, cut into large diamond shaped slices about 4 in long.

10Cook in plenty of hot oil until golden brown.
