This is a favorite cookie from Malta. It reminds me of my Mom's favorite date stuffed cookies my Grandma used to make her.

Ingredients
- FOR THE PASTRY
- 3 2/3 cups flour
- 1/3 cup sugar
- 1 - egg
- 1/2 cup butter
- 1 pinch baking powder
- FOR THE FILLING
- 14 ounces dates
- - orange zest
- - lemon zest
- 2 tablespoons brandy
How To Make date diamonds

Step 1Mix butter, flour and baking powder together and work until smooth.

Step 2Mix sugar and egg together, add to the flour and work to a smooth dough.

Step 3Cover bowl and let the dough rest for 2 hours.

Step 4Put 2 T water in a pan with the dates. Heat for 3 or 4 minutes.

Step 5Add the brandy and the zests to the dates and mash together with a fork.

Step 6Open the pastry into long strips about 4 in wide. Brush the edges with water.

Step 7Put a little filling down the center.

Step 8Fold pastry. Press both edges to keep the filling in.

Step 9Using a ravioli cutter, cut into large diamond shaped slices about 4 in long.

Step 10Cook in plenty of hot oil until golden brown.
