This is a favorite cookie from Malta. It reminds me of my Mom's favorite date stuffed cookies my Grandma used to make her.

Ingredients

  • FOR THE PASTRY
  • 3 2/3 cups flour
  • 1/3 cup sugar
  • 1 - egg
  • 1/2 cup butter
  • 1 pinch baking powder
  • FOR THE FILLING
  • 14 ounces dates
  • - orange zest
  • - lemon zest
  • 2 tablespoons brandy

How To Make date diamonds

  • Step 1
    Mix butter, flour and baking powder together and work until smooth.
  • Step 2
    Mix sugar and egg together, add to the flour and work to a smooth dough.
  • Step 3
    Cover bowl and let the dough rest for 2 hours.
  • Step 4
    Put 2 T water in a pan with the dates. Heat for 3 or 4 minutes.
  • Step 5
    Add the brandy and the zests to the dates and mash together with a fork.
  • Step 6
    Open the pastry into long strips about 4 in wide. Brush the edges with water.
  • Step 7
    Put a little filling down the center.
  • Step 8
    Fold pastry. Press both edges to keep the filling in.
  • Step 9
    Using a ravioli cutter, cut into large diamond shaped slices about 4 in long.
  • Step 10
    Cook in plenty of hot oil until golden brown.
