Virginia's Cranberry Crunch Bars
7/8 call purpose flour= (1 cup minus 2 tablespoons)
3/4 cbrown sugar
1 cquick oats
1/2 cwalnuts, finely chopped
1/2 cgranulated sugar
14 ozjar cranberry-orange relish
How to Make Virginia's Cranberry Crunch Bars
- Preheat oven to 400. Lightly grease 8" square pan. Sift flour, salt and cinnamon into bowl. Stir in brown sugar & oats. Cut in butter until mixture is crumbly. Add nuts. Press 1/2 of mixture evenly over bottom of pan. Bake at 400 for 5 minutes. Cool on wire rack.
- Mix granulated sugar, cornstarch and relish in saucepan. Cook slowly, stirring constantly, until mixture thickens and boils 3 minutes.
- Pour mixture over oats mixture in square pan & top evenly with remaining 1/2 oats mixture. Bake at 400 for 30 minutes or until golden brown.
