VIRGINIA: Munch your way across the USA. Teresa Brobst, the state of Virginia is now represented. This recipe is from " Capitol Cookies" with recipes from every state capital & Washington, DC. This recipe was submitted by St. Matthews UMW, Manakin Sabot, Virginia, Debbie Minix, Chairperson. I personally have not made these so, Teresa, if you make these, let us know if they make your state proud.

Ingredients
- 7/8 cup all purpose flour= (1 cup minus 2 tablespoons)
- 1/2 teaspoon salt
- 3/4 teaspoon cinnamon
- 3/4 cup brown sugar
- 1 cup quick oats
- 1/2 cup butter
- 1/2 cup walnuts, finely chopped
- 1/2 cup granulated sugar
- 1 tablespoon cornstarch
- 14 ounces jar cranberry-orange relish
How To Make virginia's cranberry crunch bars

Step 1Preheat oven to 400. Lightly grease 8" square pan. Sift flour, salt and cinnamon into bowl. Stir in brown sugar & oats. Cut in butter until mixture is crumbly. Add nuts. Press 1/2 of mixture evenly over bottom of pan. Bake at 400 for 5 minutes. Cool on wire rack.

Step 2Mix granulated sugar, cornstarch and relish in saucepan. Cook slowly, stirring constantly, until mixture thickens and boils 3 minutes.

Step 3Pour mixture over oats mixture in square pan & top evenly with remaining 1/2 oats mixture. Bake at 400 for 30 minutes or until golden brown.
