I like these cookies with my coffee for breakfast,or an afternoon pick-up. There yummy like a granola bar.and there even good for you.

Ingredients

  • 1/2 cup brown rice flour
  • 1/4 cup white rice flour
  • !/3 cup potato starch (not flour)
  • 3 tablespoons tapioca flour
  • 2 tablespoons coconut flour
  • 1 teaspoon guar gum ----or x gum
  • 1/4 teaspoon nutmeg
  • 1/2 cup oat flour -(grind the oats)
  • 1 teaspoon baking soda
  • 1 teaspoon cinncmon (ground)
  • THIS IS THE DRY FLOUR MIXTURE
  • 1/2 cup butter or (you can use dairy free
  • !/2 cup shortenng (crisco butter flavor)
  • 2/3 cup brown sugar
  • !/2 cup reg, white sugar
  • 4 teaspoons grated orange rind
  • ! - egg
  • 1/4 cup applesauce (may need a bit more)
  • 1 teaspoon pure vanilla extract
  • 3 cups gluten -free quick oats , - you can use reg oats...i did.
  • 1 cup dried cranberries
  • 1.TURN ON OVEN TO 350. GET COOKIE SHEETS READY, LINE WITH PARCHMENT PAPER.

How To Make "cookies for breakfast"

  • Step 1
    Mix together flour blend, oat flour,coconut flour,xgum or Guar gum, baking soda,cinnamon. ALL dry ingredients.
  • Step 2
    In another bowl,cream butter,shortening and sugars,add orange rind, egg, applesauce, and vanilla. MIX WELL..
  • Step 3
    Slowly, stir in dry ingredients. Then stir in oats and cranberries.
  • Step 4
    Using a small ice cream scoop, or spoon of your choice..drop cookies on prepared cookie sheet.leaving about 2 inches between each cookie. Place in preheated oven at 350,for about 15 or up to 18 min. according to how large your cookie is.
  • Step 5
    COOL AT LEAST ONE MIN..AND MOVE TO WIRE RACK.
