coconut meringue cookies

This recipe came from my mother. She would bake them when I was growing up and they have been my all time favorites for as long as I can remember. These are a light, flavorful treat that's great anytime of the year. Please let me know how you like them.

Ingredients

  • 1/2 cup egg whites (from aprox. 3 lg. eggs)
  • 1/4 teaspoon salt
  • 1 1/2 cups white sugar
  • 1/2 teaspoon pure vanilla extract
  • 2 1/2 cups coconut, unsweetened

How To Make coconut meringue cookies

  • Step 1
    Preheat oven to 325*
  • Step 2
    Whip egg whites, sugar and salt to a soft peak.
  • Step 3
    Add vanilla and continue beating to stiff peak.
  • Step 4
    Fold in coconut.
  • Step 5
    Drop by spoonfuls onto parchment lined cookie sheet.
  • Step 6
    Bake until to a light pinkish brown.(Yes, they will actually have a pink hue.)Aprox. 10-12 minutes. As each oven heats differently, check at 8 minutes and again at 2 minute intervals. Do not over bake!
