coconut jam fills
This recipe was one of my mothers many christmas cookie recipes. Although she's gone, i've taken over the tradition of baking all her recipes. These cookies are truly addicting. The oatmeal is subtle but works so well with the coconut and jam. I like switching it up every year and use a different flavor of jam. They ALL work. My personal fave is blueberry and strawberry. Ingredients
- 3/4 cup butter, softened
- 3/4 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla
- 1 1/2 cups sifted flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups oatmeal, uncooked
- 1 1/2 cups flaked coconut
- - jam, any flavor
How To Make coconut jam fills

Step 1Cream butter. Add sugar. Beat in egg and vanilla. Blend in flour, baking soda, salt, and oatmeal.

Step 2CHILL SEVERAL HOURS

Step 3Shape into 1 inch balls and roll in coconut. Place on GREASED cookie sheets. Make a depression in the center of each ball and fill with jam. Be sure to make them very small because they will spread.

Step 4Bake at 350 for 10 minutes. DO NOT OVER BAKE.
