coconut crisps
These are a thin crispy cookie. This recipe was in an old English recipe book and I tweaked to make my own. So quick and easy. It takes minutes to get into the oven . Makes about 30 cookies

Ingredients
- 3/4 cup self rising flour
- 1 cup sugar
- 1 - egg, beaten
- 1 teaspoon vanilla
- 1/2 cup butter, melted
- 1/2 cup toasted coconut
How To Make coconut crisps

Step 1preheat oven to 350

Step 2Toast coconut in pan for a few seconds, just until slightly brown tips (optional)

Step 3Mix flour and sugar together, I whisk together instead of sifting. Gradually beat in egg, Add vanilla and then melted butter. You can refrigerate if dough gets too soft

Step 4Form into small balls, roll in toasted coconut. Put on parchment lined or greased baking sheet, well-paced apart. These really spread. I use a little more then a teaspoon for each cookie

Step 5Bake for 10-15 minutes, unitl lightly browned and firm to touch
