Ingredients
- 1 tablespoon i can't believe its not butter
- 1/4 cup splenda or other sugar substitute
- 1 - egg white
- 2 tablespoons all purpose flour
- 1 tablespoon unsweetened, cocoa powder
- 1/2 ounce unsweetened, baking chocolate (equals 1-1/2 tbls)
- 1 teaspoon vanilla extract
- 1 pinch salt
- 1 pinch confectioners sugar (optional)

Step 1Preheat oven to 300 degrees

Step 2Coat cookie sheet with nonstick cooking spray. In small saucepan, over medium heat melt butter. Transfer butter to medium bowl, add sugar substitute and whisk briskly. Add egg, flour, cocoa powder, unsweetened chocolate, vanilla and salt. Whisk until smooth. Drop batter by heaping teaspoon about 2 inches apart onto baking sheet. Bake until set in center. 12-15 minutes. Using spatula immediatly transfer to cooling rack. (if cookies begin to stick before all are removed , return pan to oven briefly. Dust cookies with confectioners sugar if desired. Makes 1 dozen
