They are great with a nice hot cup of coffee in the A.M.
They are buttery and chewy- something like a sinckerdoodle but look like cinnamon toast!

Ingredients

1/2 csoftened butter
-
2 cgranulated sugar
-
1/2 cvegetable or canola oil

2 largeeggs, beaten
-
1/2 ccream or milk
-
3 call purpose flour
-
1 tspsalt
-
1 tspbaking soda
-
1/4 tspbaking powder
-
2 tspcinnamon
-
2 tspvanilla extract
-
CINNAMON/SUGAR MIXTURE
-
1 Tbspcinnamon -more or less (i like more)

1/4 cgranulated sugar-more or less
How to Make Cinnamon Toast Cookies
- Heat oven to 350^, Grease or spray with cooking oil a 11x15-inch jelly roll pan. Set aside.

Cream together the butter and sugar. Add the oil, eggs; beat well to blend. - Combine dry ingredients and add alternately with the cream beginning and ending with the dry ingredients. Add the vanilla. Blend well to combine.
- Pour into the prepared pan and even out the batter with a spatula.
Sprinkle top with the cinnamon/sugar mixture evenly over all.
Bake 20 minutes or until edges are light brown. - Allow to set for 10 minutes. then remove using the foil to lift out.
Cut into 2 inch or larger squares, then cut the squares into triangles. Enjoy with your coffee or tea.
