cinnamon dusted shortbread
I recently found this recipe in a book and gave it a try, though I have altered it so it's now mine. :-) This cookie tastes like a very light, slightly delicate shortbread cookie dipped in cinnamon sugar. They literally melt in your mouth! I made the batch last night and this morning there are only a few left!

Makes 24 cookies
Ingredients
- 1/2 cup butter (softened)
- 1/2 cup shortening
- 11 tablespoons sugar
- 1/2 teaspoon almond extract
- 1 tablespoon water
- 2 cups flour
- 1/2 teaspoon salt
- 1 1/2 tablespoons cinnamon
How To Make cinnamon dusted shortbread

Step 1Preheat oven to 375 degrees. In a medium mixing bowl, cream butter, shortening, almond extract, water and 5 tablespoons of sugar.

Step 2Sift together flour and salt and add to butter mixture. Incorporate into a soft dough.

Step 3Roll into balls using a generous 1 tablespoon of dough for each. Flatten with bottom of cup dipped in sugar.

Step 4Bake for 16-18 minutes or until golden.

Step 5In a small mixing bowl, combing remaining sugar and cinnamon. While cookies are still warm, toss gently, one at a time, in cinnamon sugar mixture.
