cinnamon dusted shortbread

I recently found this recipe in a book and gave it a try, though I have altered it so it's now mine. :-) This cookie tastes like a very light, slightly delicate shortbread cookie dipped in cinnamon sugar. They literally melt in your mouth! I made the batch last night and this morning there are only a few left!

Ingredients

  • 1/2 cup butter (softened)
  • 1/2 cup shortening
  • 11 tablespoons sugar
  • 1/2 teaspoon almond extract
  • 1 tablespoon water
  • 2 cups flour
  • 1/2 teaspoon salt
  • 1 1/2 tablespoons cinnamon

How To Make cinnamon dusted shortbread

  • Step 1
    Preheat oven to 375 degrees. In a medium mixing bowl, cream butter, shortening, almond extract, water and 5 tablespoons of sugar.
  • Step 2
    Sift together flour and salt and add to butter mixture. Incorporate into a soft dough.
  • Step 3
    Roll into balls using a generous 1 tablespoon of dough for each. Flatten with bottom of cup dipped in sugar.
  • Step 4
    Bake for 16-18 minutes or until golden.
  • Step 5
    In a small mixing bowl, combing remaining sugar and cinnamon. While cookies are still warm, toss gently, one at a time, in cinnamon sugar mixture.
