chunky chocolate oatmeal raisin cookies

My love of chocolate and Oatmeal Raisin cookies was my inspiration for this cookie recipe. I played with a couple recipes and this is what I came up with.

Ingredients

  • 1 1/2 cups sugar
  • 1 cup butter, softened
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1 1/4 cups all purpose flour
  • 1/3 cup powdered cocoa
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 cups quick cooking oats
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup raisins

How To Make chunky chocolate oatmeal raisin cookies

  • Step 1
    Preheat oven to 350 degrees; prepare a baking stone by lightly spraying with cooking spray
  • Step 2
    Cream butter and sugar in medium mixing bowl
  • Step 3
    Beat in egg and vanilla
  • Step 4
    Add in all dry ingredients and fold in until incorporated; then add chocolate chips and raisins
  • Step 5
    Cookie dough will be very stiff
  • Step 6
    Drop dough by teaspoon full onto your prepared baking stone
  • Step 7
    Bake 12 to 15 minutes (I had to bake for 15 to 17 minutes because I'm having trouble with my oven regulating properly so you may have to adjust your baking time back to 10 to 12 minutes)
  • Step 8
    Remove Cookies from oven and let rest about 5 minutes on the stone then move to a rack and cool completely
  • Step 9
    Delicious warm with a glass of milk or a cup of coffee :0)
