Ingredients

  • 1 cup butter, softened
  • 1 cup powdered sugar
  • 2 - egg yolks
  • 1 1/2 teaspoons peppermint extract
  • 16 - drops green food coloring
  • 2 1/4 cups flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup dark chocolate chips
  • 3 tablespoons whipping cream
  • 3 tablespoons butter
  • 18 - andees mints, cut in half diagonally

How To Make chocolate mint thumbprints/chocolate cherry

  • Step 1
    Oven to 350 degrees. Parchment paper cookie sheets. In large bowl, beat 1 cup butter and powdered sugar with electric mixer on medium speed until light and fluffy. Beat in extract, egg yolks and food coloring. Then beat in flour, salt and baking powder. Shape into 1" balls and put 2" apart on sheets. With handle of a wooden spoon put deep well in centers. Bake 10-12 minutes until set. Cool 2 minutes then put on wire racks to cool completely (15 minutes).
  • Step 2
    Microwave chocolate chips, cream and 3 T butter on high 1 minute, stirring frequently until melted and smooth. Fill each well with about 1 tsp, garnish with candy piece. Let stand 1 hour until chocolate is set.
  • Step 3
    To make Chocolate Cherry Thumbprints: Sandy puts cherry extract instead of peppermint. Same chocolate ganache, but pieces of chocolate cherry andees.
