Chocolate Fudge Irish Cream Cookies
Though the original recipe said to refrigerate for 4ish hrs...I wasn't going to wait, so just adjusted a few things and OMG YUM!!!

1 cbutter, softened
1 3/4 csugar
1/2 cirish cream
2 3/4 cflour
1 1/4 tspbaking soda
1 tspheaping, instant coffee
1 cwhite chocolate chips
1/2 csemi sweet chocolate chips
How to Make Chocolate Fudge Irish Cream Cookies
- Preheat oven to 350. Spray cookie sheets with cooking spray or line with parchment paper.
- Sift together flour, cocoa, soda and salt and set aside.
Cream together butter, sugar, eggs and vanilla until fluffy. Slowly pour in irish cream while mixer is on low-med speed until all mixed in then gradually add in flour mixture until mixed. Stir in chips.
- Drop by tablespoonful onto prepared sheets. Bake at 350 for 10-12 minutes. Being careful not to overbake, you don't want a dry cookie. Allow to cool on pan for 2-3 minutes then remove to cooling racks.
