chocolate fudge irish cream cookies

Found this on a site a few hrs ago and thought...mmmmmmmm...those sound good, so quick whipped some up and they do whip up quick too! Though the original recipe said to refrigerate for 4ish hrs...I wasn't going to wait, so just adjusted a few things and OMG YUM!!! If you like chocolate, you will love these... If you like irish cream cappuccino, you will love these... If you just love cookies, you will love these... Enjoy! :o)

Ingredients

  • 1 cup butter, softened
  • 1 3/4 cups sugar
  • 2 - eggs
  • 1 teaspoon vanilla
  • 1/2 cup irish cream
  • 2 3/4 cups flour
  • 1/2 cup cocoa
  • 1 1/4 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon heaping, instant coffee
  • 1 cup white chocolate chips
  • 1/2 cup semi sweet chocolate chips

How To Make chocolate fudge irish cream cookies

  • Step 1
    Preheat oven to 350. Spray cookie sheets with cooking spray or line with parchment paper.
  • Step 2
    Sift together flour, cocoa, soda and salt and set aside. Cream together butter, sugar, eggs and vanilla until fluffy. Slowly pour in irish cream while mixer is on low-med speed until all mixed in then gradually add in flour mixture until mixed. Stir in chips.
  • Step 3
    Drop by tablespoonful onto prepared sheets. Bake at 350 for 10-12 minutes. Being careful not to overbake, you don't want a dry cookie. Allow to cool on pan for 2-3 minutes then remove to cooling racks.
  • Step 4
    Enjoy!!!
