Momma's old fashioned chocolate cookie that you can adapt to your family's likes. The pecan halves are completely optional. You could also put a few chocolate or peanut butter chips or half a caramel on the cookies instead of the pecan halves.

Ingredients

  • 1 3/4 cups all purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup cocoa, unsweetened
  • 1/2 cup vegetable shortening
  • 1 cup sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/2 cup milk
  • 15 large marshmallows
  • 2/3 cup pecan halves, optional
  • 1 1/2 cups confectioners' sugar
  • 1/2 cup cocoa, unsweetened
  • 1/3 cup butter, melted
  • 3 tablespoons water, hot

How To Make chocolate cuckoo cookies

  • Step 1
    Preheat oven to 375°. Sift flour, baking soda, salt, and cocoa together in a medium bowl. Set aside. Cut large marshmallows in half to make thinner circles.
  • Step 2
    In a large mixing bowl, cream shortening, and sugar until fluffy. Beat in egg and vanilla. Alternately add flour mixture and milk to the creamed mixture and blend well.
  • Step 3
    Drop by teaspoonful onto greased cookie sheets. Bake at 375° for 8 minutes. Remove from oven and, working quickly, top each cook with one half of a marshmallow topped with one pecan half, LIGHTLY pressing into cookie. Return to the oven and bake 4 minutes more. Remove from oven and cool completely before glazing.
  • Step 4
    For glaze, whisk together the confectioners sugar and cocoa. Add melted butter and hot water and whisk until smooth. Drizzle over cooled cookies and let glaze before storing.
