chocolate coconut macaroons
I've been making these for years and are my favorite cookies. The coconut makes them chewy and the chocolate... well, try them and you may have the right words of description, I don't. BTW, I had to choose a main ingredient but coconut wasn't listed, is coconut a fruit?

Ingredients
- 1 can (15 oz. sweetened condensed milk
- 2 ounces dark chocolate, unsweetened
- 2 cups coconut, shredded
- 1 tablespoon coffee, strongly brewed
- 1 teaspoon vanilla extract
- 1/8 teaspoon salt
How To Make chocolate coconut macaroons
-
Step 1Preheat oven to 375 degrees F.
-
Step 2Combine sweetened condensed milk with chocolate in the top of a double boiler (you could use two pots, one smaller than the other). Place the top pan over bottom pot that holds the water.
-
Step 3Whisk the milk and cholate constantly until chocolate is melted.
-
Step 4Add the other ingredients and mix well. Drop onto two cookie sheets lined with parchment paper.
-
Step 5Bake until done, about ten minutes. Be careful because they burn easily. You want them chewy and soft.
