This is a Soft but Chewy Cookie full of flavor!!! There is no egg in this recipe, but you can replace banana with egg if you want a crispier cookie. (Amounts in recipe). Enjoy!!!

Ingredients

  • 1 cup butter
  • 1 cup peanut butter
  • 1 cup sugar
  • 2 cups brown sugar
  • 1 tablespoon vanilla
  • 2 large old bananas, mashed. or 3 eggs
  • 3 cups oatmeal, uncooked
  • 2 cups flour
  • 1 1/2 teaspoons baking soda
  • 1 1/2 teaspoons sea salt
  • I package chocolate chips, 11 oz (or white chocolate) optional
  • 1/2 cup toffee pieces, or more optional
  • 1 1/2 cups pecans or walnuts, chopped. optional

How To Make chocolate chip, pb, banana, toffee oatmeal cookie

  • Step 1
    Preheat oven to 375. In a large bowl, mix butter, pb and sugars on medium speed until smooth. Add banana and vanilla, mix well.
  • Step 2
    Add oatmeal, flour, soda and salt. Mix well. Stir in chips, toffee and nuts.
  • Step 3
    Line cookie sheets with parchment paper. Using a 1/4 cup scoop, scoop dough onto pan. Bake 15ish minutes. Allow to rest on pan at least 5 minutes, before removing to cooling racks.
  • Step 4
    I store in freezer.
