This is a Soft but Chewy Cookie full of flavor!!! There is no egg in this recipe, but you can replace banana with egg if you want a crispier cookie. (Amounts in recipe). Enjoy!!!

Ingredients For chocolate chip, pb, banana, toffee oatmeal cookie

  • 1 c
    butter
  • 1 c
    peanut butter
  • 1 c
    sugar
  • 2 c
    brown sugar
  • 1 Tbsp
    vanilla
  • 2 lg
    old bananas, mashed. or 3 eggs
  • 3 c
    oatmeal, uncooked
  • 2 c
    flour
  • 1 1/2 tsp
    baking soda
  • 1 1/2 tsp
    sea salt
  • I pkg
    chocolate chips, 11 oz (or white chocolate) optional
  • 1/2 c
    toffee pieces, or more optional
  • 1 1/2 c
    pecans or walnuts, chopped. optional

How To Make chocolate chip, pb, banana, toffee oatmeal cookie

    Preheat oven to 375. In a large bowl, mix butter, pb and sugars on medium speed until smooth. Add banana and vanilla, mix well.

    Add oatmeal, flour, soda and salt. Mix well. Stir in chips, toffee and nuts.

    Line cookie sheets with parchment paper. Using a 1/4 cup scoop, scoop dough onto pan. Bake 15ish minutes. Allow to rest on pan at least 5 minutes, before removing to cooling racks.
