chocolate chip cookies (the best!)
About 20 years ago, this recipe was shared by the mother in-law of the man who came up with it. It's been so long, I can't remember his name. I loved it from the start, but we moved and I "lost" the recipe. I have spent the past year trying to find the best chocolate chip cookie recipe, trying dozens of recipes. King Arthur Baking has one I like, but I found this recipe again when I was looking for another one a few days ago. This recipe makes a lot of cookies. I usually package my cookies in two dozen packages and give them away or freeze them and pull out a cookie when I want one (or two).

Ingredients
- 3 cups butter flavor shortening
- 2 1/4 cups sugar
- 2 1/4 cups brown sugar, firmly packed
- 8 cups all purpose flour
- 1 tablespoon baking soda
- 1 tablespoon salt
- 6 eggs
- 3/4 cup water
- 3/4 cup oatmeal, uncooked
- 4 teaspoons vanilla
- 2-3 bags chocolate chips

Step 1Preheat oven to 400 degrees F. Prep your pans by lining with parchment paper.

Step 2Mix shortening, sugar, and brown sugar together in a large mixer until creamed well. (I know some people don't like to use shortening, but using butter will change the recipe. You could try half shortening and half butter, but it really does make a difference.)

Step 3Sift together the flour, baking soda and salt.

Step 4When the shortening/sugar mixture is ready, add eggs, water, oatmeal, and vanilla until incorporated.

Step 5Carefully add the flour mixture. When the flour is fully incorporated, add the chips. (I usually use a mixture of chips, to use up odds and ends I might have in my pantry.)

Step 6Scoop your dough onto cookie sheets. I used a one tablespoon scoop and it made 10 and a half dozen cookies. Bake for 6-10 minutes depending on your oven and the size of the cookies. If they are larger, they might take 10 minutes. My oven and cookie size took about 7 minutes to bake.

Step 7Then package as you please. I got five two-dozen packages. My husband delivered two packages while I was still baking.
