The method that Kathryn uses to melt the chocolate instead of using cocoa powder in this recipe makes for a deliciously fudgy cookie. The outside has a crisp crust and the inside is chewy with chunks of chocolate. These are soooo good!

Ingredients For chewy chocolate cookies

  • 8 oz
    semi-sweet chocolate
  • 4 Tbsp
    butter
  • 2/3 c
    flour
  • 1/2 tsp
    baking powder
  • 2 lg
    eggs
  • 3/4 c
    light brown sugar
  • 1 tsp
    vanilla
  • 12 oz
    package semi-sweet chocolate chunks

How To Make chewy chocolate cookies

    Preheat oven to 350 degrees.

    Melt 8 oz. semi-sweet chocolate and butter.

    Whisk together flour and baking powder.
  • 4
    Beat eggs, brown sugar and vanilla on high speed until light and fluffy.

    Reduce speed to low and add melted chocolate.

    Mix in flour until just combined. Stir in semi-sweet chocolate chunks.

    Drop by heaping tablespoon on parchment lined baking sheets.

    Bake, rotating sheets halfway through, until cookies are shiny and a bit soft in the center, 12 to 15 minutes.

    Cool on baking sheet 10 minutes; transfer to wire rack to cool completely. Enjoy!
