cheesecake bars
This was a collection of desserts that I made for my husbands work, and to give away as gifts at CHRISTmas time. The desserts were a big hit, I alternated the colors of the cherries just for contrast. Everyone fell in love with all of the desserts that I made. These dessert recipes are also in my cookbook, and here is the one for the cheese cake bars. You can start your collection of holiday desserts early, although you do not need to wait till the holiday to make them.

Makes 24 Bars
Ingredients
- - crust ingredients
- 2 cups all purpose flour
- 2/3 cup brown sugar , packed
- 2/3 cup cold butter, no substitutes
- 1 cup chopped walnuts or pecans
- FILLING
- 2 packages 8oz. cream cheese, softened
- 1/2 cup sugar
- 1/4 cup milk
- 2 tablespoons lemon juice
- 1 teaspoon vanilla extract
- - sliced maraschino cherry halves
- 2 large eggs, room temperature
How To Make cheesecake bars

Step 1Preheat oven to 350 degrees F. Combine flour & brown sugar in a bowl. Cut in butter until mixture resembles coarse crumbs. Stir in nuts. Reserve 1 cup of crumb mixture. Press remaining crumbs into the bottom of ungreased 13 X ( X2 inch baking pan. Bake at 350 degrees F. for 12 minutes.

Step 2Meanwhile, in a mixing bowl, beat cream cheese & sugar until light & fluffy. Add eggs one at a time, beating well after each addition. Beat in milk, lemon juice & vanilla. Pour cream cheese mixture over crust. Sprinkle with reserved crumbs. Bake 25 to 30 minutes longer or until edges are lightly browned and filling is almost set.

Step 3Cool in pan on wire rack. Cut into squares. Garnish with cherries, if desired. Store in refrigerator. Recipe makes about 24 bars.
