This is a great cookie, with oats and coconut and rice krispies. Sort of like a potato chip cookie, but with the other flavors! Yummy

about 6 dozen cookies

Ingredients

  • 1 c
    butter, softened (use butter)
  • 1 c
    sugar
  • 1 c
    lightly packed brown sugar
  • 2
    eggs, beat lightly
  • 2 tsp
    vanilla (or more to taste), can also use coconut extract if you want some of both or just one
  • 1 1/2 c
    flour
  • 1 tsp
    powder
  • 1 tsp
    soda
  • 2 c
    oatmeal, old fashioned, uncooked
  • 2 c
    rice krispies cereal
  • 1 c
    coconut

How to Make Cereal Snap Cookies

Step-by-Step

  1. Oven to 350 degrees. Cream butter, sugars, eggs and vanilla. Combine flour, powder, soda and oats, add to creamed mix. Mix well. Add rice krispies and coconut. Drop by rounded teaspoons on to greased cookie sheet (or line with parchment paper). Bake 10-12 min or until LIGHT brown. DO NOT OVERBAKE.
