Okay, so I was sucked in by the Carrot Cake Hershey kisses. I wanted to use them for our Easter dessert bar. I wanted a cookie that had the aspects of carrot cake (raisins, carrots, etc) and the cream cheese part. So, I googled how to make a box cake mix into cookies and made the rest up as I went. These were surprisingly good and I am so glad I used the amped up mix, it made them perfect!

    2 eggs
  • ·

How to Make Carrot Cake Cookies

Step-by-Step

  1. Preheat oven to 350 degrees.
  2. In a large mixing bowl combine cake mix, eggs, and oil. I let this set for a few minutes to soften up the raisins and carrots (which is the reason I use the Duncan Hines mix).
  3. Scoop cookie dough into about 1 Tablespoon balls and set on ungreased cookie sheet.
  4. Bake for 8-10 minutes. Remove from oven and cool on cooling racks.
  5. Unwrap carrot cake kisses and place in a small, microwave safe bowl. Slowly melt kisses in microwave, cook for about 30 seconds and stir. Continue this process until melted. (BE CAREFUL NOT TO BURN THEM!)
  6. Once melted, pour kisses into a strong Ziploc bag. Snip the corner off bag and drizzle over cookies.
