Ingredients
- 2 1/2 cups flour
- 3/4 cup unsweetened cocoa
- 1 teaspoon baking soda
- 1 cup sugar
- 1 cup brown sugar
- 1 cup margarine, softened
- 2 teaspoons vanilla
- 2 - eggs
- 1 cup chopped pecans
- 48 - rolo candies (9 oz pkg), unwrapped
- 1 tablespoon sugar
- 4 ounces vanilla candy coating, optional
How To Make caramel filled chocolate cookies

Step 1Oven to 375 degrees. Lightly spoon flour into measuring cup, level off. In small bowl, combine flour, cocoa, and soda. In large bowl beat both sugars and butter until light and fluffy. Add vanilla and eggs. Add flour mixture. Stir in 1/2 c of the pecans. For each cookie, with floured hands, shape 1 T dough around a piece of Rolo, covering completely. In small bowl, combine remaining 1/2 c pecans and 1 T sugar. Press one side of each ball into pecan mixture. Place nut side up 2" apart on ungreased cookie sheets. Bake at 375 degrees 7-10 min or until set and slightly cracked. Cool 2 min, remove from cookie sheets and cool completely. If desired, melt candy coating until smooth over low heat. Drizzle over cookies.
