This is a delightful cookie candy. If you love caramel and coconut, you will be in heaven. We used to have a treat like this at our candy store. It was a large square marshmallow dipped in caramel and rolled in coconut.

These caramel coconut marshmallows are a sweet and salty treat for all ages! Gooey and satisfying, it's a sweet and chewy clout of nutty caramel bliss. Coating the balls in coconut gives these candies a tropical feel.

Ingredients

  • 28 - caramels (about 8 oz)
  • 1/4 cup butter or margarine
  • 2 tablespoons half and half or milk
  • 1 1/2 cups confectioners' sugar, sifted
  • 1 cup salted peanuts
  • 2 cups miniature marshmallows
  • 1 cup flaked coconut

How To Make caramel coconut marshmallow balls

  • Caramels, butter, and half and half in a glass bowl.
    Step 1
    In a 2-quart glass measure, place caramels, butter, and half and half.
  • Glass bowl in the microwave.
    Step 2
    Cook on high for 5 minutes in the microwave.
  • Stirring after 3 minutes.
    Step 3
    Stir after 3 minutes. Cook until melted and smooth.
  • Stirring in confectioners' sugar.
    Step 4
    Stir in sugar until smooth.
  • Stirring in peanuts.
    Step 5
    Add peanuts.
  • Stirring in mini-marshmallows.
    Step 6
    Stir in marshmallows just until lightly coated.
  • Mixture formed into balls and rolled in coconut.
    Step 7
    The mixture will be cool enough to shape the caramel mixture into balls. Roll in coconut until well coated.
  • Storing in a resealable container.
    Step 8
    Store in a covered container.
