Caramel Coconut Marshmallow Balls

A sweet and salty treat for all ages! These are a terrific after school (or after work) snack. The Test Kitchen
- caramels (about 8 oz.)
- 1/4 c
- butter or margarine
- 2 Tbsp
- half 'n half or milk
- 1 1/2 c
- confectioners sugar, sifted
- 1 c
- salted peanuts
- 2 c
- miniature marshmallows
- 1 c
- flaked coconut
How to Make Caramel Coconut Marshmallow Balls
- 1In 2-quart glass measure, place caramels, butter and half 'n half.
Cook at HIGH 5 minutes in the microwave, or until melted and smooth, stirring after 3 minutes.
Stir in sugar until smooth; add peanuts.
Stir in marshmallows just until lightly coated.
- 2Mixture will be cool enough to shape caramel mixture into balls; roll in coconut until well coated.
Store in covered container.
