This is a delightful cookie candy and if you love caramel and coconut you will be in heaven. We use to have a treat like this at our candy store...it was large square marshmellows dipped in caramel and rolled in coconut.

28caramels (about 8 oz.)

1/4 cbutter or margarine

2 Tbsphalf 'n half or milk

1 1/2 cconfectioners sugar, sifted

1 csalted peanuts

2 cminiature marshmallows
-
1 cflaked coconut
How To Make caramel coconut marshmallow balls

1In 2-quart glass measure, place caramels, butter and half 'n half. Cook at HIGH 5 minutes in the microwave, or until melted and smooth, stirring after 3 minutes. Stir in sugar until smooth; add peanuts. Stir in marshmallows just until lightly coated.

2Mixture will be cool enough to shape caramel mixture into balls; roll in coconut until well coated. Store in covered container.
