This is a delightful cookie candy and if you love caramel and coconut you will be in heaven. We use to have a treat like this at our candy store...it was large square marshmellows dipped in caramel and rolled in coconut.

Ingredients For caramel coconut marshmallow balls

  • 28
    caramels (about 8 oz.)
  • 1/4 c
    butter or margarine
  • 2 Tbsp
    half 'n half or milk
  • 1 1/2 c
    confectioners sugar, sifted
  • 1 c
    salted peanuts
  • 2 c
    miniature marshmallows
  • 1 c
    flaked coconut

How To Make caramel coconut marshmallow balls

    In 2-quart glass measure, place caramels, butter and half 'n half. Cook at HIGH 5 minutes in the microwave, or until melted and smooth, stirring after 3 minutes. Stir in sugar until smooth; add peanuts. Stir in marshmallows just until lightly coated.

    Mixture will be cool enough to shape caramel mixture into balls; roll in coconut until well coated. Store in covered container.
