breakfast bars or hobbit seed cakes

These soft chewy breakfast bars will get you through to lunch or work as well as a hiking bar. They energize and keep you feeling full. They are not sweet like most cookies but they really satisfy. Also check out the hobbit seed cakes from this same recipe. will have Eric take a picture of that tonight.

Ingredients

  • 1 1/2 sticks butter (3/4 cup)
  • 2/3 cup flour or (1/2 wheat germ 1/2 flour)
  • 1 large egg
  • 1/2 teaspoon allspice, ground
  • 1 teaspoon baking powder
  • 2 cups oatmeal quick cook oats
  • 2/3 cup pumpkin seeds
  • 2 - chunks chocolate bark
  • 1/3 cup nuts or other seeds
  • 3/4 cup brown sugar, firmly packed
  • IF YOU WISH TO MAKE THE HOBBIT SEED CAKES FOLLOW BELOW THIS
  • OMIT THE SEEDS, CHOCOLATE AND NUTS FROM ABOVE AND REPLACE THEM WITH THIS BELOW
  • 1/2 cup sesame seeds
  • 2/3 cup milled flax seeds

How To Make breakfast bars or hobbit seed cakes

  • Step 1
    Preheat oven to 350 degrees.
  • Step 2
    In a large bowl Partially melt butter in microwave 40 seconds Slice bark squares into small pieces
  • Step 3
    In the bowl add the remaining ingredients and spread into a greased and floured 9x12 Baking dish. Bake for 25 minutes until a golden brown all the way across. Before they cool score into 4 rows or 4 bars. allow to cook and eat
  • Step 4
    Hobbit seed cakes Omit seeds, chocolate and nuts from the top recipe and replace with the sesame seeds and milled flax seed. cook and mix as it said above and cook the same amount of time. It will be crispier but still not crispy and denser than the regular recipe. Eric was dancing over this one.
