This is a simple & easy Azorean recipe from the island of Sao Miguel. Great with a cup of tea or coffee.

Ingredients

  • 1 cup sugar
  • 3 tablespoons butter
  • 2 tablespoons cornstarch
  • 2 large eggs
  • 2 1/2 cups all purpose flour
  • 2 teaspoons baking powder

How To Make bolachas de acucar (azorean sugar cookies)

  • Step 1
    Preheat the oven to 325F. Lightly coat cookie sheets with nonstick cooking spray or line with parchment paper.
  • Step 2
    In a large bowl, stir together the cornstarch and sugar. Add the butter and cream together with an electric mixer.
  • Step 3
    Add eggs, one at a time, mixing well after each addition.
  • Step 4
    Combine the flour and baking powder; stir into the sugar mixture until a dough forms.
  • Step 5
    On a floured surface, roll the dough out to 1/4 inch thickness and cut into rounds with cookie cutter or inverted glass.
  • Step 6
    Place cookies on baking sheet. Bake for 7 to 10 minutes in the oven, until the cookies are done.
  • Step 7
    Allow cookies to cool for a couple of minutes and remove them to wire rack.
