Boiled Raisin Cookies

This is one of my most used recipes. Sometimes I substitute dates, craisins or chocolate pieces for the raisins.
This recipe really makes a big batch.
Ingredients

2 craisins
-
1 cwater
-
2 csugar
-
3/4 cshortening, crisco

3/4 cbutter, softened

3eggs
-
1 tspvanilla extract

5-6 cflour
-
1 coatmeal, uncooked
-
1/2 tspsalt
-
1 tspnutmeg or omit and use 2 teaspoons cinnamon

1 tspcinnamon

2 tspbaking soda in 1/4 cup hot water

1 cnuts
How to Make Boiled Raisin Cookies
- Boil raisins with water until almost all water is absorbed. Cool.
- Cream together sugar, crisco, and butter. Add eggs.
- Sift together flour, salt, nutmeg and cinnamon.
- Add to butter mixture and mix in remaining ingredients, including the raisins.
- Drop by teaspoon onto un-greased cookie sheet. Bake 10 minutes in a 350 degree oven. Let stand on cookie sheet 2 minutes, then remove to wire rack to cool.
