boiled raisin cookies
These are my oldest son Bruce's favorite cookie! This is one of my most used recipes. Sometimes I substitute dates, craisins or chocolate pieces for the raisins. This recipe really makes a big batch.

Ingredients
- 2 cups raisins
- 1 cup water
- 2 cups sugar
- 3/4 cup shortening, crisco
- 3/4 cup butter, softened
- 3 - eggs
- 1 teaspoon vanilla extract
- 5-6 cups flour
- 1 cup oatmeal, uncooked
- 1/2 teaspoon salt
- 1 teaspoon nutmeg or omit and use 2 teaspoons cinnamon
- 1 teaspoon cinnamon
- 2 teaspoons baking soda in 1/4 cup hot water
- 1 cup nuts
How To Make boiled raisin cookies

Step 1Boil raisins with water until almost all water is absorbed. Cool.

Step 2Cream together sugar, crisco, and butter. Add eggs.

Step 3Sift together flour, salt, nutmeg and cinnamon.

Step 4Add to butter mixture and mix in remaining ingredients, including the raisins.

Step 5Drop by teaspoon onto un-greased cookie sheet. Bake 10 minutes in a 350 degree oven. Let stand on cookie sheet 2 minutes, then remove to wire rack to cool.
