bill's favorite molasses cookies

When we had been married 10 years my husband asked me why I never made his favorite cookie. I said it was probably because I didn't know what it was. He answered Soft Molasses. I then went on "the hunt" for a cookie to please my husband. Finding several recipes, I have combined, deleted, added...developing my own. This is the cookie we have settled on. This summer we celebrate our 40th Anniversary.

Ingredients

  • 3 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon ginger
  • 1/2 cup softened butter (no substitutes)
  • 1/2 cup brown sugar (packed)
  • 1 - egg
  • 3/4 cup molasses
  • 1/3 cup hot water

How To Make bill's favorite molasses cookies

  • Step 1
    Preheat oven to 350 degrees Sift together dry ingredients, flour, baking soda, salt, cinnamon, ginger.
  • Step 2
    Using mixer, cream sugar and butter till light and fluffy. Add egg, then molasses.
  • Step 3
    Lower speed on mixer and add half the flour mix till blended. Pour in hot water all at once. Scrape bowl and beaters. Mix in remaining flour.
  • Step 4
    Very lightly spray non-stick cookie pans with vegetable spray. Using medium cookie scoop drop dough on pans 3-4 inches apart. Bake in 350 oven 12-15 minutes or till cookies rise and get firm.
