Buttery, sweet and filled with finely chopped almonds and rolled in sugar - perfect for an afternoon treat or served with coffee. An almost shortbread, perfect for gift giving. Note - I always double or triple this recipe

- - 1 cup butter
- - 3 tb caster/super fine sugar
- - 1 ts vanilla
- - 2 cups plain flour
- - 1 cup finely chopped almonds (hazelnuts work well too)
- - 1 cup sifted icing/confection sugar for rolling in
How To Make betty's almond butter ball cookies

Step 1Pre-heat oven to 180oC/365oF. Prepare 2 baking trays by covering them with baking paper.

Step 2In a bowl, cream the butter, sugar and vanilla. Add in the flour and nuts and stir through. Shape into cherry sized balls and place on the baking paper.

Step 3Bake in the pre heated oven for 15-18 minutes. While hot roll in the sifted sugar and allow to cool completely.
