Betty's Almond Butter Ball Cookies
Note - I always double or triple this recipe

·1 cup butter
·3 tb caster/super fine sugar
·1 ts vanilla
·2 cups plain flour
·1 cup finely chopped almonds (hazelnuts work well too)
·1 cup sifted icing/confection sugar for rolling in
How to Make Betty's Almond Butter Ball Cookies
- Pre-heat oven to 180oC/365oF. Prepare 2 baking trays by covering them with baking paper.
- In a bowl, cream the butter, sugar and vanilla. Add in the flour and nuts and stir through. Shape into cherry sized balls and place on the baking paper.
- Bake in the pre heated oven for 15-18 minutes. While hot roll in the sifted sugar and allow to cool completely.
