Buttery, sweet and filled with finely chopped almonds and rolled in sugar - perfect for an afternoon treat or served with coffee. An almost shortbread, perfect for gift giving. Note - I always double or triple this recipe

Ingredients

  • - 1 cup butter
  • - 3 tb caster/super fine sugar
  • - 1 ts vanilla
  • - 2 cups plain flour
  • - 1 cup finely chopped almonds (hazelnuts work well too)
  • - 1 cup sifted icing/confection sugar for rolling in

How To Make betty's almond butter ball cookies

  • Step 1
    Pre-heat oven to 180oC/365oF. Prepare 2 baking trays by covering them with baking paper.
  • Step 2
    In a bowl, cream the butter, sugar and vanilla. Add in the flour and nuts and stir through. Shape into cherry sized balls and place on the baking paper.
  • Step 3
    Bake in the pre heated oven for 15-18 minutes. While hot roll in the sifted sugar and allow to cool completely.
