I was an elementary school secretary for 12 years while my sons were in school and this recipe came from the PTO cookbooklet they published. I make this fairly often but especially in the fall when the new apples come out. Enjoy

Ingredients

  • 2 cups all purpose flour
  • 1 cup white wheat or whole wheat flour
  • 1 1/2 teaspoons baking soda
  • 3/4 cup shortening
  • 3/4 cup splenda brown sugar
  • 3/4 cup light brown sugar
  • 1 1/2 teaspoons salt
  • 1 1/2 teaspoons cinnamon
  • 3/4 teaspoon ground cloves
  • 3/4 teaspoon nutmeg
  • 2 - eggs
  • 1 1/2 cups chopped walnuts
  • 1 1/2 cups chopped unpeeled apples
  • 1/2 cup raisins
  • 1/2 cup milk
  • 3/4 teaspoon maple flavoring (optional)

How To Make better for you fresh apple cookies

  • Step 1
    Mix flours and baking soda together. Mix shortening, brown sugars, salt, spices and eggs until well blended.
  • Step 2
    Add flour mixture, nuts, raisins and apples. Blend in milk and maple flavoring, if using.
  • Step 3
    Drop by large spoonfuls onto greased cookie sheets. Bake at 400 deg. for 11-14 minutes until medium brown in color. Cool on racks.
  • Step 4
    There is a glaze if you choose to use it. Blend 1 1/2 cups confectioners sugar, 1 Tbl. margarine or crisco, 1/4 tsp. vanilla 1 1/2 Tbl. milk. If desired, 1/2 to 3/4 tsp. of maple flavoring can be added to glaze. Sread on cookies while warm.
