This chewy oatmeal cookie, filled with sweet dried cranberries, coconut, and toasted pecans is 'berry nutty' indeed! I love a warm, chewy oatmeal cookie and spent many years trying to find just the right recipe. One day while gathering ingredients from my pantry for a batch of oatmeal cookies, I spied dried cranberries, coconut, and pecans left over from other baking projects and decided to use them up. My daughter named the cookie "Berry Nutty Oatmeal."

Ingredients For berry nutty oatmeal cookies

  • 3/4 c
    sugar
  • 1 1/8 c
    brown sugar, firmly packed
  • 1 1/4 c
    butter, softened (2 1/2 sticks)
  • 2 lg
    eggs
  • 1 1/2 tsp
    vanilla extract
  • 2 1/4 c
    all-purpose flour
  • 1 1/2 tsp
    baking soda
  • 1 1/2 tsp
    baking powder
  • 1 1/2 tsp
    cinnamon, ground
  • 2 c
    oats, regular
  • 1 c
    coconut
  • 3/4 c
    dried cranberries
  • 1 c
    pecans, in pieces

How To Make berry nutty oatmeal cookies

    Preheat oven to 350 degrees.

    Cream together sugars, butter, and eggs.

    Add vanilla and mix.

    In a separate bowl, whisk together the flour, soda, baking powder, cinnamon and oats.

    Add dry ingredients to wet ingredients and mix until just combined.

    Stir in coconut, cranberries and pecans.

    Drop by teaspoon onto ungreased cookie sheets. Bake 350 degrees for 12-14 minutes or until edges are slightly browned. (Do not overbake!)

    SUGGESTIONS: Only use REAL butter. Toasting the pecans adds a wonderful flavor but when time is short, I leave out this step and the cookies are still delicious!
