My youngest son loves these cookies. He is the type of child that would prefer a healthy snack over junk food. This cookie is a combination of both.

Ingredients
- 1 1/4 cups all purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/3 cup butter, softened
- 1/3 cup sugar
- 1/3 cup brown sugar, firmly packed
- 1 medium banana, ripe
- 1 - egg
- 1 teaspoon vanilla
- 1/2 cup walnuts, optional
How To Make banana softie cookies

Step 1Preheat oven to 375*. Lightly grease cookie sheets.

Step 2Place flour, baking powder, and salt in small bowl; stir to combine.

Step 3In a separate bowl, beat butter and sugars at medium speed until light and fluffy. Beat in banana, egg, and vanilla.

Step 4Add in flour mixture. Beat at low speed until well blended. Stir in walnuts if desired. (Dough will be soft.) Drop rounded teaspoonfuls of dough 2 inches apart onto prepared cookie sheets.

Step 5Bake 9-11 minutes or until edges are golden brown. Let cookies stand on cookie sheets for 2 minutes. Remove cookies to wire racks; cool completely. Store in tightly covered container at room temperature.
