My youngest son loves these cookies. He is the type of child that would prefer a healthy snack over junk food. This cookie is a combination of both.

Ingredients

all purpose flour
1 tsp
baking powder
1/2 tsp
salt
1/3 c
butter, softened
1/3 c
sugar
1/3 c
brown sugar, firmly packed
1 medium
banana, ripe
1
egg
1 tsp
vanilla
1/2 c
walnuts, optional

How to Make Banana Softie Cookies

Step-by-Step

  • 1Preheat oven to 375*. Lightly grease cookie sheets.
  • 2Place flour, baking powder, and salt in small bowl; stir to combine.
  • 3In a separate bowl, beat butter and sugars at medium speed until light and fluffy. Beat in banana, egg, and vanilla.
  • 4Add in flour mixture. Beat at low speed until well blended. Stir in walnuts if desired. (Dough will be soft.) Drop rounded teaspoonfuls of dough 2 inches apart onto prepared cookie sheets.
  • 5Bake 9-11 minutes or until edges are golden brown. Let cookies stand on cookie sheets for 2 minutes. Remove cookies to wire racks; cool completely.

    Store in tightly covered container at room temperature.
