banana cookies with orange icing
If you like banana bread you will love this cookie. Be sure to use very ripe bananas- because that is where the best flavor comes from. You can all nut or peanut butter to the batter if desired even a few mini chocolate chips. Do your own thing. By placing the dough in the refrigerator for 30 minutes before making the cookie they will be crisp on the outside and soft on the inside. Land O'Lakes and me

Ingredients
- COOKIES:
- 3/4 cup real butter,softened
- 3/4 cup brown sugar, firmly packed
- 2 medium over ripe bananas, mashed with a fork
- 1 large egg
- 2 teaspoons freshly grated orange zest
- 1/2 teaspoon vanilla
- 2 cups all purpose flour
- 1/2 teaspoon each of baking powder and soda
- 1/4 teaspoon salt
- ICING:
- 2 tablespoons real butter
- 3 tablespoons brown sugar, firmly packed
- 2 tablespoons cream or milk
- 1 1/4 cups powdered sugar
- 1/2 teaspoon vanilla
- - orange zest grated for garnish
- ADD IN'S IF DESIRED:1/4 CUP OF ANY OF THE FOLLOWING
- - miini chocolate chips, coconut, nuts, or 2 tablespoons peanut butter
How To Make banana cookies with orange icing

Step 1Heat oven to 350^. Combine butter, and brown sugar in a large bowl. Beat at medium speed, until creamy. Add bananas, egg, orange zest and vanilla, continue beating until well mixed.

Step 2Reduce speed to low; add flour, baking powder, soda and slat. Beat until well mixed. Mix in any add in's if desired. Blend well. Chill dough in refrigerator for 30 minutes.

Step 3Drop dough by rounded teaspoonfuls, 2 inches apart, onto ungreased cookie sheets. Bake for 8-to 12 minutes or until edges are lightly browned. Cool completely before icing them.

Step 4Icing: Melt butter in a 1 quart saucepan over medium heat . Add the brown sugar and cream. Cook and stir until mixture comes to a boil. Remove from heat. Add powdered sugar and vanilla; beat until well mixed; cool slightly. Frost cooled cookies and garnish with grated orange zest. Let frosting set.
