Ingredients
- 1 cup granulated sugar
- 1 cup butter, softened
- 1/2` cup sliced bananas
- 1 teaspoon pure vanilla extract
- 2 1/3 cups all purpose flour
- 1/2 cup chopped salted peanuts
- - granulated sugar
- FILLING
- 4 cups powdered sugar
- 1/3 cup butter, softened
- - 5 to 6 tablespoons milk
- 3 tablespoons unsweetened cocoa
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon salt

Step 1Heat oven to 350 degrees In large mixing bowl, combine 1c sugar, butter, banana and vanilla. Beat at medium speed until light and fluffy. Add flour Beat at low speed until soft dough forms. Stir in peanuts

Step 2Shape dough into 1 inch balls. Place balls 2 inches apart on ungreased cookie sheet. Flatten balls to 2 inches diameter circles using the bottom of a drinking glass, dipping glass in sugar to prevent sticking.

Step 3Bake for 12 to 15 minutes or until golden brown. Cool completely.

Step 4In medium mixing bowl, combine filling ingredients Beat at low speed until smooth. Spread about 2 teaspoons filling on bottom of half the cookies. Gently press the bottoms of remaining cookies against filling to form sandwiches.
