My husband and I thoroughly enjoyed these moist banana chocolate chip cookie bars. Especially since my husband enjoys bananas and I enjoy chocolate. I hope you enjoy them too! Since I prepared this recipe twice, I used two different brands of chocolate chips. Hershey's Semi-Sweet Chocolate Chip, as well as Kroger's Semi-Sweet Chocolate Baking Chips. I'm including photos of both brands of chocolate chips.

Ingredients For banana chocolate chip cookie bars

  • shortening, to coat the inside of a 9x9-inch baking pan
  • 1 c
    butter, softened
  • 1 c
    packed light brown sugar
  • 2 lg
    eggs, room temperature
  • 2
    bananas, peeled and mashed (together they weighed 12-oz. before i peeled them)
  • 1 1/2 tsp
    vanilla extract
  • 2 1/2 c
    all purpose flour
  • 1/2 tsp
    baking powder
  • 1/2 tsp
    baking soda
  • 1/2 tsp
    salt
  • 1 c
    semi-sweet chocolate chips, plus a few more to place on top of the batter

How To Make banana chocolate chip cookie bars

    Preheat the oven to 350 degrees F.

    Coat the inside of a 9x9-inch rectangular baking pan with Crisco All-Vegetable Shortening and set aside.

    In a large mixing bowl, add the softened butter, light brown sugar, eggs, mashed bananas and vanilla extract.

    Using an electric hand-held mixer, beat ingredients together until light and fluffy, about 4 to 5 minutes.

    In another bowl, whisk together the flour, baking powder, baking soda, and salt.

    Gradually beat/blend the flour mixture into the creamed mixture. Stir in the 1 cup chocolate chips thoroughly.

    Spread the batter evenly into the baking pan. Place a few extra chocolate chips on top of the batter.

    Bake for 25 minutes. Remove from oven and cool completely before cutting into squares.
