I'm always looking for nutritious, quick, and preferably portable breakfast ideas. These "cookies" fit the bill. Plus, with olive oil (instead of butter/margarine) and applesauce (instead of egg) this is a recipe you can really feel good about!

Ingredients For banana bread breakfast cookies

  • 1 1/2 c
    unbleached, all purpose flour
  • 1/2 c
    sugar
  • 3/4 tsp
    cinnamon
  • 1/2 tsp
    baking soda
  • 1/2 tsp
    salt
  • 1/4 tsp
    nutmeg
  • 1/2 c
    extra virgin olive oil
  • 1 3/4 c
    quick-cooking oats, uncooked
  • 2
    mashed ripe bananas
  • 1 c
    raisins
  • 1/4 c
    applesauce, unsweetened

How To Make banana bread breakfast cookies

    Combine flour and next 5 ingredients.

    Stir in olive oil until mixture resembles coarse meal.

    Add oats, mashed bananas, applesauce, and raisins; mix thoroughly.

    Drop by teaspoonfuls onto a cookie sheet that’s been lightly coated with cooking spray (or use a baking stone, which doesn't require greasing.) Bake 14 minutes in a preheated 400F oven.
